• To be responsible to assist the Director of Food and Beverage for the efficient and costs effective functioning of the assigned restaurant. The manager is responsible to attain and exceeded the pre-determined budgeted revenue through the provision of efficient service and aggressive up selling.
• Assists the Director of Food and Beverage in supervising the assigned Outlet in the function of all Service associates, facilities and costs and to ensure maximum Food and Beverage departmental profit is achieved.
• In liaison with the Stewarding and Housekeeping, responsible to maintain and develop the levels of cleanliness, sanitation and hygiene of the assigned Outlet. Ensuring that regular inspections are carried out, scheduled cleaning task place and necessary cleaning is action as required.
• Assist the Executive Chef in the preparation of menus and participate in the pricing policy, taking into consideration local requirements, market prices, competition, recipes, potential costs and the availability of food products.
• Follows the working schedule approved by the Director of Food and Beverage is always on time.
• To work in any Outlet when necessary, due to business pressure or employee storage.
• To ensure the development and maintenance of established quality standards in the assigned restaurant through active participation in the service and guest contact aspects especially during peak periods of business.
• Assists the Director of Food and Beverage with inspections of Physical aspects of all service areas, storerooms and equipment.
• To ensure correct revenue charging and appropriation for all outlet revenue via the P.O.S. machine. This encompasses control of guest checks, voids, new item input and closing reports.
• To submit and participate in the weekly and monthly Food and Beverage revenues forecasting program.
• Perform related duties and special project as assigned.
• To deal with guest complaints or problems immediately and to take the necessary remedial action reporting any serious complaints, actions or problems to the Food and Beverage manager without delay.
• Aware of all house rules and obey them and also assist in enforcing them. Conduct in such a manner so as to encourage fellow associates to do likewise.
• To maintain an exemplary level of personal grooming, responsibility and product awareness and work rate at all times.
• Responsible to completely inspect the set-up and mise-en-place of the outlet for all meal periods in accordance with the established standards of the Hotel. Particular emphasis is made upon the standard of cleanliness.
• Responsible to ensure that all outlet associates practice aggressive hospitality to guest through courteous and friendly service.
