Role summary
The Breakfast Manager is fully accountable for the breakfast operation at Fresca, serving up to 300 covers a day, and oversees the lunch service through to the afternoon handover. This is a highly guest-facing role: the Breakfast Manager sets the tone for each guest's day, builds relationships, and actively promotes the wider STAY experience. Together with the Fresca General Manager, the role ensures a consistent management presence across the full day.
Key responsibilities
Breakfast operation
• Conduct a daily pre-shift briefing covering occupancy, VIPs, special requests, allergies, and dietary requirements.
• Lead the daily breakfast buffet and à la carte service, ensuring the buffet is fully set, well presented, and replenished throughout service.
• Maintain high standards of food presentation, cleanliness, and hygiene in line with food safety requirements.
• Control breakfast inclusions by verifying room numbers and packages, and ensure non-inclusive guests and walk-ins are charged correctly.
• Monitor flow and seating during peak times to keep waiting times low and the atmosphere relaxed.
Guest experience and upselling
• Be visible on the floor throughout service, greeting guests and engaging with them personally.
• Recognize repeat and long-stay guests, and record their preferences to personalize service throughout their stay.
• Promote STAY's wider offering, including spa and wellness services, activities, and dining, and support revenue targets through upselling.
• Handle feedback and complaints promptly, and follow up to ensure issues are resolved.
• Apply service recovery gestures within agreed authority limits.
• Monitor guest reviews and feedback related to breakfast, and act on recurring themes.
Lunch and handover
• Check lunch reservations and walk-in levels in advance to plan staffing and setup.
• Oversee the lunch operation, ensuring a smooth transition from breakfast.
• Support the Sunday Brunch operation, as well as events and group bookings that overlap with the shift.
• Record any open guest issues, VIP arrivals, and special requests in the handover log so nothing is missed between shifts.
• Prepare a clear handover to the afternoon and evening management team.
• Ensure mise en place, stock, and setup are ready for the following morning.
Team and coordination
• Obtain daily occupancy forecasts from Front Office to plan staffing levels and buffet volumes.
• Supervise, schedule, and train the breakfast team, including onboarding new staff.
• Ensure the team follows grooming, uniform, and service standards at all times.
• Carry out regular performance feedback and support team development.
• Coordinate closely with kitchen, stewarding, and engineering, particularly for early-morning issues outside office hours.
• Act as Duty Manager during the morning and deputise for the Fresca General Manager when required.
Administration and cost control
• Manage breakfast stock levels, ordering, and waste control in coordination with the kitchen.
• Monitor operating equipment and report maintenance needs.
• Complete daily reports on covers, guest feedback, and incidents.
• Deliver against agreed KPIs, including breakfast review scores and upselling revenue.
Candidate profile
Preferred profile
• Confirmed Assistant Manager with a proven background in breakfast buffet operations of around 300 covers a day.
• Fluent Thai with good English, as the role involves regular communication with engineering, kitchen, and stewarding teams outside office hours.
Alternative profile
• Young hotel school graduate (European hotel school background preferred) with relevant breakfast buffet experience.
• Natural understanding of Western breakfast culture and the expectations of international guests.
