Manage and supervise all operations within the Stewarding Department to ensure efficiency. Oversee cleanliness and sanitation of all kitchens, kitchen equipment, utensils, and dishwashing areas. Monitor waste management procedures, including separation and disposal following safety standards. Control chemical supplies, dishwashing machines, and cleaning equipment usage. Lead, train, coach, and evaluate Stewarding team members. Coordinate with the Culinary Team and F&B Service Team to support smooth daily operations. Manage resources effectively and monitor cost control within the department. Prepare staff schedules and conduct regular training sessions on hygiene and safety. Ensure compliance with hotel hygiene standards, safety regulations, and HACCP requirements. Support banquet operations, buffet setup, and special events.
